What do A5, BMS and marble score mean?
Japanese A5 is the top grade in Japan. Marbling is scored on the 12-point BMS scale, and A5 requires BMS 8–12. Most of our Japanese cuts are BMS 11.
Australian beef uses the AUS-MEAT marble score, which tops out at 9+. 9+ is the highest possible Australian marble score, and many of our Full Blood cuts are graded 9+.
Richer marbling means smaller portions: 4–5 oz of A5 per person, 7–8 oz of Australian BMS 9+, 8–10 oz of American or lower-BMS cuts. The full BMS guide

What is Kobe Wine Wagyu?
Kobe Wine Beef is a Wagyu brand from Hyōgo Prefecture, the same prefecture as the city of Kobe. The cattle are Japanese Black, finished in Hyōgo on feed that includes grape pomace and other by-products of Kobe Wine production. The brand's standards are set by the Kobe Wine Beef Association. The cuts we carry are graded A5, BMS 11, and every order ships with a certificate.
Is Kobe Wine the same as Kobe Beef?
No, and we think you should know the difference. Kobe Beef is a protected name. It may only be used for certified Tajima-lineage cattle raised and processed in Hyōgo that meet the Kobe Beef Marketing & Distribution Promotion Association's standards. Kobe Wine Beef is a separate Hyōgo brand with its own feeding standard. Both are Japanese Wagyu. We sell Kobe Wine A5 and label it exactly that way.
Why we're careful with the name
In the U.S. the word "Kobe" is often used loosely. We'd rather you know exactly what you're buying: Japanese A5 Wagyu from Hyōgo, under the Kobe Wine Beef brand, graded BMS 11, with the grade on every product page. If you have a question about sourcing, text us and we'll answer it straight.
Which cut?
- NY Striploin (12 oz, $135): our #2 seller overall. Firm, beefy, serves three to four.
- Filet (8 oz, $160): the most tender cut. Serves two.
- Ribeye (16 oz, $190): the most decadent. Serves four to five. See the Kobe Wine A5 Wagyu ribeye page for the full detail.
- 3-Cut Collection (36 oz, $475): all three side by side. A premium-gift order on its own.

Questions, answered
Is Kobe Wine Wagyu real Kobe Beef?
No. Kobe Beef is a protected designation for certified Tajima cattle from Hyōgo. Kobe Wine Beef is a different Hyōgo Wagyu brand, Japanese Black cattle fed with by-products of Kobe Wine production. We sell Kobe Wine A5 and label it that way.
Is Kobe beef Wagyu?
Yes. All Kobe Beef is Wagyu (Japanese Black cattle of the Tajima line), but most Wagyu is not Kobe Beef. Kobe Wine Beef is also Wagyu, from Hyōgo, under its own brand standard.
What grade is your Kobe Wine Wagyu?
A5, BMS 11 on Japan's 12-point marbling scale. Every order ships with a certificate.
Which Kobe Wine cut should I start with?
The NY Striploin (12 oz, $135). It's our most-ordered Kobe Wine cut and serves three to four as a tasting.
How is it shipped?
