What do A5, BMS and marble score mean?

Japanese A5 is the top grade in Japan. Marbling is scored on the 12-point BMS scale, and A5 requires BMS 8–12. Most of our Japanese cuts are BMS 11.

Australian beef uses the AUS-MEAT marble score, which tops out at 9+. 9+ is the highest possible Australian marble score, and many of our Full Blood cuts are graded 9+.

Richer marbling means smaller portions: 4–5 oz of A5 per person, 7–8 oz of Australian BMS 9+, 8–10 oz of American or lower-BMS cuts. The full BMS guide

What is Miyazaki Wagyu?

Miyazaki Wagyu is Japanese Black cattle raised in Miyazaki Prefecture on Kyūshū, Japan's southern island. Miyazaki's Wagyu won the Prime Minister's Award, Japan's highest Wagyu honor, in the meat-cattle division at four consecutive National Competitive Exhibitions of Wagyu, the "Wagyu Olympics" held every five years: 2007, 2012, 2017 and 2022, a run spanning 15 years. Every Miyazaki cut we carry is graded A5, BMS 11.

Why Miyazaki?

Consistency. Miyazaki farmers raise Kuroge-washu (Japanese Black) cattle on small family operations with calm environments, carefully balanced feed and extended finishing times. The result is dense, even marbling, rich crimson color, and fat that melts at low temperatures for a buttery, silky texture. Miyazaki steaks have a clean, focused flavor with gentle sweetness and umami rather than overwhelming richness. That makes them ideal for special occasions and for guests trying Japanese A5 for the first time. Every cut is graded A5 in Japan, imported in limited quantities, and ships with a certificate.

Which Miyazaki cut should I choose?

  • Ribeye (16 oz, $175): the most marbled Miyazaki cut. Serves four to five as a tasting. Our #1 seller.
  • Filet (8 oz, $165) / Petite Filet (4 oz, $85): the most tender, a touch leaner.
  • Striploin (10 oz, $115): firmer bite, classic steakhouse flavor.
  • Denver (8 oz, $80): a hidden gem from the shoulder. Big marbling at the friendliest price per ounce.
  • Tasting Collection (34 oz, $460): several cuts side by side. On its own it ships free by FedEx 2-Day; free FedEx Overnight starts at $500+.

How much Miyazaki A5 per person?

3 to 4 ounces. Slice it, sear it fast and share it. More in our portion size guide.
